Take these: salads, veges, fruits, grains, meats, etc. Start eating again!

I have been in anorexia recovery since mid august.
i have been eating a 2,000 calorie diet and have gone from 75 lbs – 87 lbs (currently).
how do i know when my body has stopped gaining and is stable?
when will this be?
what are signs/symptoms of it?
how long will it take?
